Here you go–the one, the only–(but there are regional and national variations on them)–

Peppernuts

6 c. corn syrup

3 c. brown sugar

¾ c. butter

¾ c. shortening

3 t. soda

½ t. cardamon

2 t. allspice

½ t. mace

½ t. oil of anise

Warm syrup, butter, and shortening. Cool. Add flour and spices. If too rich, add a little water. (You can refrigerate or freeze this dough and it will last forever, or as close to it as you’d want stuff in the frig to get. Just microwave to revive it.) The more the dough is kneaded, the better it is. Let stand overnight. Roll out ¼ inch thick or thicker. Cut with small round cookie cutter (metal film canister is perfect). Bake 10-15 minutes at 350. Makes about 80 dozen cookies (yes, I did mean 8-zero dozen)

Note: anise flavoring is not the same as oil of anise. If you don’t have the oil (probably in one of those tiny flavoring bottles), use most of a bottle of anise flavoring (to taste).

My favorite bars are 5-Layer bars (only I make them more like 8 layer bars ) and Chewy Pecan Pie bars. Haven’t made either kind on awhile.
